Christmas Bliss Balls & Healthy Mince Pies

Christmas.

A time for indulging. A time for good vibes. A time for celebrations.

And also a time for seriously delicious food. Words that no doubt leave you with visions of butter filled pastry, rich creamy treats and sickly sweet desserts. But with a little know-how, that doesn’t have to be the case, and with these simple, easy to make recipes (with ingredients you can easily find, and won’t break the bank), you’ll be proving to everyone that rich and indulgent doesn’t have to also mean ‘feel super full and sleepy afterwards’. Our christmas spiced bliss balls are the perfect festive snack on the go (or desk drawer pick me up), and our mince pies are as convincingly ‘bad for you’ as those all butter ones you were eyeing up in Waitrose. Enjoy them, share them, and serve them with a side of mulled wine - we’re all about balance after all. 
 

CHRISTMAS BLISS BALLS


Ingredients

- 1 ½ cups cashews
- 1 ½ cups desiccated coconut (plus extra for rolling)
- zest of 2 x oranges
- ½ lemon juiced
- 2 tsp vanilla extract
- 3 tsp ground ginger
- pinch salt
- 4 tbsp maple syrup
- 1/8 tsp ground cloves
- ¼ tsp cinnamon

Method

1.    Place everything except the cranberries in a food processor and blitz until well combined.
2.    Add the cranberries and pulse through the mix, until combined throughout 
3.    Roll into small balls, roughly 25g, then roll in desiccated coconut
4.    Keep in the fridge for up to 2 weeks, or out of the fridge for up to 5 days 

 

POLLEN + GRACE MINCE PIES


Ingredients

Filling

-    100g of raisins
-    100g of cranberries
-    100g of sultanas
-    1 x apple
-    2  tsp of ground cinnamon
-    1/2 tsp of ground nutmeg
-    1/2 tsp ground ginger
-    2 x oranges
-    1 tsp of vanilla extract

Pastry

-    250g ground almonds
-    2 tbsp honey
-    2 tbsp olive oil
-    1 egg
-    1/2 tbsp vanilla
-    1 tbsp brown rice flour

Method

1.    For the mincemeat, add all the ingredients to a large pan and boil for 20 minutes 
2.    Whilst the mincemeat is cooling slightly, mix all the ingredients for the pastry together, then roll out until 1 cm thick, using extra flour to dust the surfaces 
3.    Grease your muffin/bun tray then cut out circles of pastry  the same size as the tray holes 
4.    Lightly press the circles into each hole
5.    Add a tsp of mincemeat to each 
6.    Place your pastry shape on top of the mincemeat (stars/circles/a full lid will all work!) 
7.    Bake for 10-15 minutes, until golden brown
8.    Leave to cool completely before removing from the tray
